Is it possible to become a born again vegetarian? I hope so because we indulged and indulged again in the meat over the holidays. No, my stomach was not happy but oh my taste buds!
Okay. Back to our regularly scheduled eating plan. Our fridge was so empty last night but I was inspired to try and come up with something from the cupboard instead. Soup is my go-to quick meal so I was already figuring on that. After a quick perusal I found orange lentils and split peas. I chopped an onion and threw it in the warm olive oil. I sweat them until they were soft and just starting to color - about 15 minutes. Then I added the garlic. I used about 5 cloves, minced. I let them cook for about 5 minutes and then I added the lentils and peas along with 2 containers of veg broth. I had some sliced sun dried tomatoes and some freshly dried spicy oregano from my garden so I added them as well. After the peas and lentils were cooked, I added some smoked paprika and cayenne.
And it was good.
Today I need to get some fresh veggies (and bread and eggs and juice and everything).
A little tip! I like the bubbly part of soda so we make juice soda. I use about 1/6 soda to a can of some type of bubbly water. My favorite juice is seltzer water with peach-orange-mango juice. It's really lovely.
